Oil prices climb on new Gaza-Israel fears

(AP) ? Oil prices climbed Friday after Israeli troops fired on crowds in Gaza surging toward the border fence, killing one Palestinian.

Benchmark crude ended the trading day up 90 cents to $88.28 a barrel on the New York Mercantile Exchange.

Brent, which is used to price international varieties of oil, was up 83 cents to $111.38 a barrel.

Friday's killing is the first violence since a truce between Israel and the militant Hamas group was reached two days ago. Prior to the shooting, oil prices had been falling, thanks mostly to optimism over the stability in the region that the cease-fire agreement provided.

Israel launched an offensive on Nov. 14 to halt rocket fire from Gaza, unleashing some 1,500 airstrikes on Hamas-linked targets, while Hamas and other Gaza militants showered Israel with just as many rockets. The truce reached Wednesday had eased fears of a war that could broaden beyond Gaza and eventually disrupt oil supplies.

Paul Tossetti, senior director of markets and country strategies at PFC Energy, said prices were linked to the action in Gaza but that he expects this to be a temporary bump and that the cease fire would ultimately hold.

"I expect the market might back away from those concerns," he said.

Traders are also looking ahead to the next meeting of the Organization of the Petroleum Exporting Countries on Dec. 12. Tossetti said OPEC has been maintaining high levels of production but he doesn't expect anything to change at the upcoming meeting.

"It will probably be a non-event and a non-event for prices," he said.

In the U.S., motorists returning from the Thanksgiving holiday are getting the slightest bit of relief. The national average for a gallon of regular unleaded gasoline fell one-tenth of a cent to $3.43. However, that is still 10 cents higher than last Thanksgiving.

Other futures on the New York Mercantile Exchange:

? Wholesale gasoline lost nearly 6 cents to end at $2.7439 a gallon.

? Natural gas lost 0.2 cents to end at $3.901 per 1,000 cubic feet.

? Heating oil was up 5 cents to end at $3.0771 a gallon.

Jack Taylor's performance left even Kobe Bryant impressed.

The Division III guard shattered the NCAA scoring record with 138 points, hoisting a mind-boggling 108 attempts ? or one shot every 20 seconds ? in eclipsing the previous record by 25 points.

Taylor made 27 of 71 3-point attempts, was 52 of 108 overall from the field and added seven free throws on 10 attempts while playing 36 minutes in Grinnell's 179-104 victory over Faith Baptist Bible on Tuesday night in Grinnell, Iowa.

"That's crazy, man. I don't care what level you're at. Scoring 138 points is pretty insane," the Lakers' superstar said after Los Angeles' victory over the Nets.

Even Taylor was having a hard time processing his feat.

"I don't think reality has set in yet," said the 5-foot-10, 170-pound sophomore from Black River Falls, Wis.

That's partly because Taylor was coming off a poor shooting weekend and started Tuesday's night game off slow ? at least according to his standards. His coaches figured the best way to get him on track was for him to keep chucking, so that's what Taylor did.

"Maybe my cold shooting from the weekend was affecting me," Taylor said. "But then they started to drop."

Taylor had 58 points at halftime.

Then he got hot.

Taylor was 32 of 58 from the field ? including 18 3s ? in the final 20 minutes and averaged an astonishing four points a minute in the second half.

"It felt like anything I tossed up was going in," Taylor said.

Bryant, who has a shoe that bears his Black Mamba nickname, has a theory.

"He must have been wearing the Mambas, man. Only Mambas have no conscience to shoot the ball that much," said Bryant, who has an 81-point game, second-best in NBA history, on his resume.

Rio Grande's Bevo Francis held the NCAA scoring record with 113 points against Hillsdale in 1954. In 1953, Francis had 116 against Ashland Junior College. Frank Selvy is the only other player to reach triple figures, scoring 100 points for Division I Furman against Newberry in 1954. The previous Grinnell record was 89 by Griffin Lentsch last Nov. 19 against Principia.

Taylor recently transferred to Grinnell, located about 50 miles east of Des Moines, after playing one season for Wisconsin-La Crosse. Under coach David Arseneault, the Pioneers press and shoot 3s like nobody else in the country at any level. They've led the nation in scoring for 17 of the past 19 seasons while ranking first nationally in 3-point shooting for the 15 of those past 19 years.

Taylor's game was so astounding it overshadowed the 70 points Faith Baptist's David Larson had on 34-of-44 shooting.

Carmelo Anthony and the New York Knicks were amazed by Taylor's accomplishment when they heard about it after their victory in New Orleans.

"I never heard of nothing like that. That's like a video game," Anthony said, an incredulous look on his face. "How can you shoot 100 times, though?"

He joked that from now on when someone asks if he's taking too many shots, he'll mention "that someone shot it 108 times."

Raymond Felton also was astounded by the 108 shots.

"His elbow has got to be sore," Felton said.

I Hired a Tutor! | Writer. Traveler. Tea Drinker.

An actual picture of me and a friend with my teacher. Yes, I?ve taken to wearing green dresses and white bows.

So, I finally decided to fork over the cash, and get my own chinese teacher. You see, speaking Chinese is now a common thing in my life. I speak, or write, Chinese every single day now. Sometimes a lot, sometime a little, and my speaking and listening is getting noticeably better for which I?m super psyched (speaking and listening are my weak points).

What is getting noticeably worse is my grammar and vocabulary. I hang my head in shame when I try to recall words I learned last August in my private Kunming classes. And when I try to use grammar patterns, fugghetaboutit. It?s shameful.

I want to go to the chinese classes here at the university (free for english teachers to attend), as it is the way I have learned so far, but this semester my English classes totally clash with the Chinese classes and I?m unable to attend any. So I?ve just been going chinese-less recently. Apart from 5-20 minutes a day practicing writing on my Skritter App, I haven?t done any real studying to speak of.

That?s why, when a friend mentioned she was hiring a tutor, I jumped on the bandwagon and met the teacher too. My teacher, Hu Laoshi, seems very nice. She spent some time teaching Chinese in Cambodia and has recently moved back to Lin?an. With no full-time job yet, her schedule is pretty wide open so I can have class when it?s best for me.

She does an hour and a half, one-on-one for 100 rmb (about 15 bucks) and she will teach me anything I like. I?m just about done with the Hanyu Jiaocheng textbook series, so I want to finish that off before moving onto something else. Class officially begins tomorrow. She seems very nice and speaks slow, clear Mandarin. I?ll meet her twice a week for 3 hours total. It?s not as much as I?d like (I?d prefer 2 hours a day), but with my schedule, and the fact that I actually have to pay her, limits it a bit.

As an added bonus, I cleaned up and re-organized my spare bedroom into a study room so we?ll have a comfortable place to meet. Yay for forced cleaning!

My friend, who also hired the same teacher twice a week, was trying to justify the money. (It will be a little over $100 a month, a not insignificant amount when you earn chinese rmb.) But I told her to not worry. It?s classes, learning, not some expensive piece of clothing you?ll only wear once or a fancy meal. This is something that will help us connect with local people, make traveling easier and help to make daily life not only more understandable, but more enjoyable as well. I feel, like travel, money on a Chinese teacher is money well spent.

So I?m back on the bandwagon and learning chinese again. I know I sound like a total Hermione, but I?m pretty excited to study again!

Ruckus Wireless prices IPO at high end of range: market source

(Reuters) - WiFi products maker Ruckus Wireless Inc priced its initial public offering at $15 per share, the high end of its expected price range, a market source told Reuters.

The company, which is backed by Google Inc's Motorola Mobility LLC and venture capital firm Sequoia Capital, raised $126 million by selling 8.4 million shares.

Ruckus offered 7 million shares while selling shareholders, including Telus Corp, offered 1.4 million shares.

The Sunnyvale, California-based company, which makes wireless LAN products for both indoor and outdoor use, competes with Meru Networks Inc and Aruba Networks Inc.

The company's customers include Time Warner Cable Inc, Towerstream Corp, Tikona Digital Networks and Bright House Networks.

Goldman Sachs & Co and Morgan Stanley are the lead underwriters to the offering.

The company's shares are expected to begin trading on the New York Stock Exchange on Friday under the ticker symbol "RKUS".

(AP) ? A House panel says credit rating agencies and federal regulators contributed to MF Global's collapse last year. But it pinned most of the blame on ex-CEO Jon Corzine.

The report issued Thursday by the House Financial Services Oversight and Investigations subcommittee found Corzine's risky strategies caused the brokerage firm's failure. That largely reiterated a statement released Wednesday by the committee's Republicans.

Democrats on the panel did not endorse the report's findings.

MF Global was forced to seek bankruptcy protection last year, the eighth largest in U.S. history. More than $1 billion in customer money went missing. Corzine, a former U.S. senator and governor of New Jersey, stepped down as CEO in November 2011.

Still, the House panel said in its report that rating agencies Moody's and Standard & Poor's failed to identify the biggest risk: MF Global's $6.3 billion bet on European countries' debt.

And it noted that the Securities and Exchange Commission and the Commodity Futures Trading Commission failed to share important information about the firm with each other. The two regulators have oversight authority for MF Global.

S&P spokesman David Wargin said "We monitored MF Global's creditworthiness and took ratings action as events warranted, based on a review of available information."

The SEC disagreed with the report's findings. It noted that it had shared a request for MF Global to increase its capital cushion against losses with the CFTC in August 2011.

"The report neglects to note that our staff in fact informed the CFTC staff," SEC spokesman John Nester said. He noted that CFTC General Counsel Dan Berkovitz testified at a subcommittee hearing that his agency had been told about the issue by the SEC.

CFTC Commissioner Jill Sommers, who is leading the agency's investigation of MF Global, and CFTC Chairman Gary Gensler both declined to comment on the subcommittee's report.

A Moody's spokesman didn't immediately return requests for comment.

The report also said the Federal Reserve Bank of New York fell short of properly assessing the firm's level of risk before allowing it to join an elite group of firms that help the government sell Treasury securities. That endowed MF Global with a seal of financial strength and gave it a competitive edge.

"This marked the first time in the history of the U.S. futures industry that a customer suffered a loss due to the mishandling of customer funds," Rep. Spencer Bachus, R-Ala., chairman of the full Financial Services Committee, said in a statement.

"These customers deserve to know how and why their money went missing. And all Americans deserve to know that regulators and policymakers are held accountable to prevent similar losses from ever occurring again," Bachus said.

Much of the money belonged to farmers, ranchers and other business owners. They bought and sold financial contracts with MF Global to reduce their risks from the fluctuating prices of corn, wheat and other commodities. In recent months, nearly 80 percent of those funds have been returned.

Republican members of the subcommittee said the panel's staff interviewed more than 50 witnesses and reviewed 243,000 documents from MF Global, former employees of the firm and federal regulators.

Corzine took the top job at MF Global after losing a bid for re-election as New Jersey governor in 2009.

On Wednesday, he disputed through a spokesman the allegations made by the Republican lawmakers. He said he "acted in good faith" at all times and rejected the claim that he ran the firm in an authoritarian manner.

Film producer and comics fan Michael Uslan, who acquired the rights to make Batman as a movie in 1979, knew nearly a decade before Tim Burton's 1989 "Batman" was released who the Joker would be.

It came in a burst of inspiration in 1980 from the pages in the New York Post: a publicity photo of Jack Nicholson from the "The Shining" in which he hacks through a door and announces, "Here's Johnny!"

Uslan knew immediately he'd found his clown prince of crime. Using black marker, a red pen and Wite-Out, he turned Nicholson into the DC Comics villain.

The sketch went up for auction Monday until Dec. 3 through ComicConnect.com, along with several other pieces of art and comics that Uslan has collected.

Heart failure in older breast cancer patients linked to medication

ScienceDaily (Nov. 14, 2012) ? Heart failure is a relatively common complication in older women with breast cancer, but the risk is even higher in those patients treated with adjuvant trastuzumab (Herceptin?), Yale School of Medicine researchers report in the current issue of the Journal of the American College of Cardiology.

The researchers conducted this study because older women who are at higher risk of decreased heart function were often excluded from randomized clinical trials of trastuzumab, which is used to treat breast tumors that over-express human epidermal growth factor receptor-2 (HER-2). Past clinical trials in younger, healthier women showed improved survival, but also increased heart complications linked to trastuzumab, especially when combined with a frequently used therapy called anthracycline chemotherapy.

"We observed an even higher risk of heart failure or cardiomyopathy after trastuzumab therapy than those in past clinical trials," said lead author Dr. Jersey Chen, assistant professor of cardiology at Yale University School of Medicine and a member of the Yale Cancer Outcomes, Public Policy, and Effectiveness Research (COPPER) Center at Yale.

The Yale COPPER team examined the association between the use of adjuvant trastuzumab and anthracycline therapy and heart failure and cardiomyopathy, the most serious cardiotoxic complications, in 45,536 female Medicare beneficiaries with early-stage breast cancer. The use of trastuzumab has increased over time from 2.6% of the women who received any adjuvant therapy in 2000 to 22.6% in 2007.

The team found that compared with patients who received no adjuvant chemotherapy or trastuzumab; use of trastuzumab was associated with a 14% higher adjusted incidence rate for heart failure or cardiomyopathy over three years. Patients who received both trastuzumab and anthracycline had a 23.8% higher rate, and those treated with anthracycline chemotherapy alone had a 2.1% higher rate of heart failure or cardiomyopathy events over three years.

"Further study is needed to fully understand the benefits and risks of trastuzamab when they are used in the real-world population," said Cary Gross, senior author of the study and director of the COPPER Center.

China slams Dalai Lama; Tibetans self-immolate

BEIJING (AP) ? China accused the Dalai Lama of allying with Japanese right-wingers in an island dispute as a way of attacking China and blamed him for glorifying a wave of self-immolations among Tibetans. The comments came as state media reported two more Tibetans died after setting themselves on fire.

Chinese Foreign Ministry spokesman Hong Lei said the Dalai Lama's comments in Japan on the island dispute showed his "reactionary nature" and determination to split China apart under the guise of religion.

"To achieve his separatist goal, he associated with the Japanese right-wing forces. Chinese people despise him for what he did. We are firmly opposed to any country's providing a stage for him," Hong said.

Chinese media have said the Dalai Lama called the islands by their Japanese name during a news conference in Yokohama last Monday but an Associated Press review of a tape of the event showed he referred to them only as "the islands."

On Monday in Okinawa, the Dalai Lama criticized Chinese media for making up a claim that he sided with the Japanese.

Tensions have run high over the islands, known as Senkaku in Japanese and Diaoyu in Chinese, since the Japanese government nationalized some of them in September in a bid to prevent Tokyo's right-wing governor from buying them. Violent anti-Japanese protests broke out in Chinese cities, and Beijing has sent ships to conduct near-constant patrols near the uninhabited rocks.

Hong also attacked the Dalai Lama for reportedly accusing the Chinese government of failing to investigate the root cause of despair and hopelessness among Tibetans that many say have prompted people to take their lives as a form of protest. China has long accused the Dalai Lama and his supporters of inspiring such acts, despite his condemnation of all forms of violence.

"Not only did the Dalai not condemn them, but he actually glorified these acts, which are against the national law and religious principles," Hong said.

On Monday, a 24-year-old Tibetan man set himself on fire at a prayer ceremony in Tongren county in western China's Qinghai province, becoming the seventh person in six days to self-immolate in the region, the rights group Free Tibet said.

Nyingkar Tashi is reported to have died in the protest in which he called out for freedom in Tibet and for the longevity of the Dalai Lama, the group said. A statement from the self-declared Tibetan government-in-exile in Dharmsala, India, provided similar details.

The official Xinhua News Agency also reported the man's death and said a second man, identified as Nyangje Lhabon, 20, set himself ablaze in the same county a few hours later and died.

A Tongren government official who picked up the phone said he could not comment, while Ma Chunyin, head of the Tongren Communist Party Propaganda Department, said he was not aware of any reported self-immolation.

Tibet support groups overseas have said the increase in protests in recent days is meant to highlight Tibetan unhappiness with Chinese rule as the country's leaders hand over power to younger successors at a party congress in Beijing.

"Throughout the 18th Party Congress the new unelected leaders have been reminded on an almost daily basis of Tibetans' rejection of Chinese rule, and of the terrible failure of policies to cement the occupation," Free Tibet Director Stephanie Brigden said.

The Dalai Lama fled to India following an abortive 1959 uprising against Chinese rule over Tibet. He denies seeking the region's independence, saying that he wishes Tibetans to enjoy real autonomy and protection of their traditional Buddhist culture.

Maricel E. Presilla's glorious 'Gran Cocina Latina' is an instant ...

In a seminal essay on the Latin American novel, Cuban writer Alejo Carpentier talked about "culinary context" as one of the essential elements of the region's fiction. As in his own novels, Carpentier was reaching for that overarching component that made Latin America, well, Latin America.

Maricel E. Presilla titles the first chapter of her 902-page "Gran Cocina Latina" (Norton, $45), "What is Latin America?" The book is an ambitious work that encompasses all Latin American cooking, thus claiming that, say, Mexican pozole soup is of a piece with Ecuadoran ceviche. We are all in this together, Presilla is saying by the very act of writing this book, taking her cue from another Cuban compatriot, Jose Marti, who defined "America" as the parts of the hemisphere where Iberian, not Anglo-Saxon, languages are spoken.

And what is the binding element in "Our America," as Marti called it? In a word, colonialism, the "common history" Presilla says has thrust us together, too often reluctantly.

There is a depth to this colonialism, as Presilla discovers in her culinary journeys. Though Spain rushed to claim its chunk of the Americas at the dawn of the 16th century, its attitude was not that of the Renaissance but of the Middle Ages. Thus, Presilla, a trained historian as well as a chef and restaurateur, finds Latin cooking medieval at heart. In specific techniques, yes, but also in attitude.

Slow food, a recent movement stateside, is business as usual in a Latin kitchen. Ripeness is all. The sensuality of flavor, what Latins call sabor, achieved by a required marinade (adobo) for meats, an aromatic vegetable saute (sofrito) for main courses and labor-intensive procedures like scraping sweetener from a bar of raw sugar (panela). This unique taste (which, like flavor, translates as sabor), created by time-intensive traditions and a loving relationship to them, is a legacy of the medieval.

But Iberian colonialism yielded another phenomenon. Criollo, the Spanish for Creole, meaning "from the soil," is what Latin Americans call themselves and their culture. Thus, Presilla's book could be called "Gran Cocina Criolla." And criollo cuisine, like its New Orleans Creole cousin, is the happy amalgam of (Southern) European, Native American and African traditions. History is a horror show (just think of slavery), but sometimes forced marriages live happily ever after, in the kitchen if not the bedroom.

Presilla is offended when she hears traditional Latin American dishes "patronizingly pigeonholed as 'hearty peasant food,'" for, as she notes, "the work that goes into them is stupendous." Indeed, ask a Puerto Rican cook about making pasteles, a term that elsewhere means "pies," but on the island names tamales made with malanga, green bananas, green plantains and calabaza. Pasteles are made at Christmas, and the process is as daunting as the judgment reserved for their worth by fastidious puertorriquenos.

Not everything is challenging. An Argentine churrasco calls for nothing but skirt steak and salt - the asado or parrillada it's often a part of is more elaborate, though any backyard grill master will enjoy making it. And the provolenetta appetizer, offered at every Argentine steak house, requires just provolone cheese and oil.

Whether of mind-bending complexity or stark simplicity, the dishes found in this book will treat the initiate to wonderful new sensations of the palate, while instructing Latin cooks on the cooking of their neighbors or even the undiscovered secrets of their own national cuisine.

Presilla pairs her dishes with drink, often beer or wine from the region, and equally a nonalcoholic drink that may be the traditional accompaniment.

There are notes galore, tips on storing and personal anecdotes. Gran Cocina Latina is rich enough for those who enjoy the vicarious pleasure of reading culinary writing even if not following a recipe for tonight's dinner. And in the best cookbook tradition, recipes are carefully detailed.

This is the right moment for this book, an instant classic that is destined to become the go-to text on the subject. Meticulously researched and elegantly written, intelligent in its history and recipes, beautifully laid out and illustrated, Gran Cocina Criolla satisfies curiosity about cultures and marvelous cuisines that are increasingly present beyond regional borders.

Not just in Miami, where Presilla is a contributor to The Miami Herald's Food pages, but throughout the United States, there is a growing familiarity with Latin American food. This book will set the record straight for those acquainted with sometimes distorted versions of classic dishes. Want to make standards like a Cuban arroz con pollo or Argentine chimichurri steak sauce? Here are not just recipes, in their original splendor, but also contemporary adaptations. Presilla, like the good historian she is, knows that traditions are not static and that what we call "fusion" is an old and constant process, nowhere more so than in Latin cooking.

It will take years if not decades to cook one's way through this glorious volume. And like any great cookbook, this one beckons two kinds of reading, with one eye on the page and the other on the stove. And intimately, at a comfortable reading spot. GRILLED SKIRT STEAK WITH ARGENTINEAN CHIMICHURRI

Skirt steak, popularly known as churrasco, is a staple of practically all local Latin restaurants, not just Argentine steak houses, and available in our area's supermarkets. The savory green steak sauce chimichurri has also become a staple, with many cooks substituting cilantro for the traditional parsley, thus "creolizing" this recipe even more.

4 skirt steaks (about 1 pound each), trimmed

Coarse salt

Chimichurri (see recipe)

Light a grill or heat a broiler on medium-high heat. Season the steaks with salt and brush with some of the chimichurri sauce. Grill or broil the steaks about 4 inches from the source of heat for 4 to 5 minutes on each side, or until medium rare. Let stand for 5 minutes before serving. If you wish, thinly slice the steaks across the grain at an angle before serving.

Bring to the table with a bowl of chimichurri. Serve with rice and beans or Peruvian Warm Purple Potato and Squash Salad (see recipe). Makes 8 servings.

ARGENTINEAN CHIMICHURRI

I am infatuated with chimichurri, the infinitely adaptable sauce that Argentineans and Uruguayans serve with their grilled specialties. I like to use it as a table sauce for churrasco (grilled Argentinean skirt steak) and palomilla (a thin Cuban steak) and as a marinade for pork, chicken and lamb. I also like to toss penne or linguine with a couple of spoonfuls of chimichurri, or serve it hot or cold with grilled chicken.

1 bunch flat-leaf parsley, leaves only, finely chopped (about 1/2 cup)

1 large head garlic, separated into cloves, peeled and finely minced

1 tablespoon dried oregano, lightly crushed

1 teaspoon crushed red pepper flakes

1/2 cup distilled white vinegar

1/2 cup safflower oil or extra-virgin olive oil

1 teaspoon salt, or to taste

1 teaspoon freshly ground pepper

Mix all the ingredients in a small bowl, or combine in a food processor and pulse to a coarse puree. Refrigerated, tightly covered, it will keep for 2 to 3 weeks. Whisk well before serving. Serve at room temperature. Makes about 1 1/4 cups.

Per tablespoon: 52 calories (95 percent from fat), 5.5 g fat (0.3 g saturated, 0.8 g monounsaturated), 0 cholesterol, 0 protein, 0.6 g carbohydrates, 0.2 g fiber, 117 mg sodium.

Uruguayan Variation: Though Uruguayans insist that their version is totally different, the two are in fact very similar. For 1 bunch parsley, use 1 head garlic, 1 teaspoon dried oregano, 1 teaspoon ground cumin, 1 tablespoon crushed pepper red flakes, 1/2 cup red wine vinegar, 1 cup corn oil or light olive oil, 2 teaspoons salt, or to taste and 1 teaspoon white pepper.

PERUVIAN WARM PURPLE POTATO AND SQUASH SALAD WITH OLIVE OIL AND PAPRIKA DRESSING

I first made this terrific salad on a day when my friend Harold McGee, the food science writer, came to visit bearing a jar of olive oil from Northern California. It was a first-press oil from green Mission olives, so fresh and peppery that its producer had named it "two-cough oil," for the result when people tasted it. You won't get the "two-cough" effect unless you have a very rambunctious young olive oil, but the salad will still be wonderful.

2 pounds purple potatoes, peeled and cut into 1-inch cubes

2 pounds calabaza (West Indian pumpkin) or butternut squash, peeled, seeded, and cut into 1-inch cubes

Salt

1/2 cup extra-virgin olive oil

1/4 cup balsamic vinegar

1 tablespoon hot pimenton (Spanish smoked paprika)

1/4 teaspoon ground cumin

1/8 teaspoon ground allspice

1 small red onion (about 5 ounces), finely chopped (about 1 cup)Place the potatoes and squash in separate saucepans, cover each with about 2 inches of water, and add 1 teaspoon salt to each pan. Bring to a boil over medium heat and cook, covered, until tender but not mushy, 15 to 20 minutes. Drain. Meanwhile, to prepare the dressing, whisk together all the remaining ingredients in a small bowl. Add salt to taste and whisk again. Combine the warm pumpkin and potatoes in a serving bowl. Toss gently with the dressing, and serve at once. Makes 6 servings.

YUCA FINGERS WITH CILANTRO SAUCE PRESILLA

I never imagined that my yuca fries with cilantro sauce would become as popular as they have. The result of my curious exploration of Latin tubers and dipping sauces in the early 1980s, the pairing is now served in Cuban restaurants all over the United States.

3 pounds fresh yuca, peeled and cut into 5-inch chunks, or 2 pounds frozen yuca

Corn oil or light olive oil, for deep-frying

Salt

Creamy Cilantro Sauce Presilla (see recipe)

Boil the yuca until soft but not falling apart. Drain in a colander and let cool. Cut the yuca lengthwise into 3- to 5-inch-long fingers about an inch thick, like french fries. Line a baking sheet with wax paper and arrange the yuca fingers on it in a single layer. Cover loosely with plastic wrap or wax paper and refrigerate until chilled and firm, preferably overnight.

Heat the oil to 350 degrees in a large saucepan or deep skillet over medium heat. Working in batches, add the yuca fingers a few at a time to the hot oil and turn until lightly golden on all sides. Drain on paper towels and sprinkle with salt. Serve at once with the sauce. Makes 6 to 8 servings.

What to Drink: Mojito, daiquiri on the rocks or a floral Susana Balbo Crios Torrontes from Mendoza, Argentina.

CREAMY CILANTRO SAUCE PRESILLA

Indian cilantro chutney had caught my imagination on a trip to India, but I decided to turn it into a mayonnaise flavored with cilantro and my favorite spices, and of course garlic. The day I tried the recipe on Cuban and Indian friends, they almost drank it from the bowl.

2 cups mayonnaise, homemade or store-bought

4 garlic cloves, peeled

1/2 cup (well-packed) cilantro leaves, washed and dried

1 serrano or jalapeno pepper, seeded, deveined and coarsely chopped

1 teaspoon ground cumin

1/4 teaspoon ground allspice

1/2 teaspoon dried oregano

Juice of 1 lime (about 2 tablespoons)

Salt to taste

Place the mayonnaise in a blender or food processor. Add the garlic, cilantro, hot pepper, cumin, allspice and oregano. Process until smooth and velvety. Season with the lime juice and salt to taste. If using a jarred mayonnaise, you might not need either since some brands are already tart and salty. Place in a bowl and serve with Yuca Fingers. Leftovers may be refrigerated, covered with plastic film, for a couple of days.

ANN ARBOR-It looks like Mother Nature was wasting her time with a multimillion-year process to produce crude oil. Michigan Engineering researchers can "pressure-cook" algae for as little as a minute and transform an unprecedented 65 percent of the green slime into biocrude.
"We're trying to mimic the process in nature that forms crude oil with marine organisms," said Phil Savage, an Arthur F. Thurnau professor and a professor of chemical engineering at the University of Michigan.

Here is what you need to know about this supposed breakthrough.

It is true that crude oil was originally produced primarily from the remains of ancient algae. The algae died, sunk to the bottom of lakes and shallow seas, and were buried over time. As the organic matter became buried deeper within the earth, the heat and pressure increased over time until it was converted first into kerogen, and then into crude oil. If the material experienced too much heat, it was cracked into natural gas.?

So one might expect that this process could be sped up in the lab, and in fact over the years many have claimed to produce "crude oil" from biomass quickly by adding heat and pressure. But what is generally not made clear is that this so-called crude oil that is being rapidly produced from biomass is very different from the crude oil that Mother Nature produced.?

When biomass is heated up rapidly to above 500 degrees C, fast pyrolysis occurs. The cellulose, lignin, and hemicellulose in biomass breaks down in seconds into a pyrolysis oil and char. This pyrolysis oil is often called bio-crude, and some have gone so far as to suggest that it is essentially the same as crude oil. However, the composition is very different.?

Unlike crude oil, the components in pyrolysis oil contain a lot of oxygen. These compounds include aldehydes, carboxylic acids (like acetic acid), ketones, alcohols, sugars, and pyrolytic lignin, and their volumetric energy content tends to be far lower than that of petroleum. Further, these are generally short molecules, and when they are refined to transportation fuel a good portion of the oil is lost as carbon dioxide and water in the process.?

Pyrolysis oil is typically produced from wood chips, and a number of companies have been making pyrolysis oil for years. However, if you used algae as the feedstock for a pyrolysis reactor, you would expect that the output would be similar compounds to what is produced with wood feedstock.

Therefore, my expectation would be that the Michigan researchers are producing pyrolysis oil and not crude oil. And the press release announcing the results indicated as much:?"Before biocrude can be fed into the existing refinery system for petroleum, it needs pre-refining to get rid of the extra oxygen and nitrogen atoms that abound in living things."??

While I don't want to downplay this research, the problems with trying to speed up what nature did for free are that the energy and pressure inputs are costly, and the product isn't crude oil. Thus, my conclusion is that it is interesting research, but far from an energy breakthrough. Any obviously energy-intensive process for producing transportation fuel will ultimately find it very difficult to compete with crude oil.

Stolen goods worth tens of thousands sold on eBay, court told | This ...

A BUSINESSMAN has appeared in the dock accused of selling hordes of stolen goods on an online auction website.

Steven Miller allegedly flogged everything from Christmas trees and sheds to car parts and powertools on eBay.

The 36-year-old faced Plymouth magistrates accused of burgling a business unit and swiping surf and sports equipment worth more than ?30,000.

He is also accused of stealing a high-performance BMW M3 Coup? car worth ?11,500.

Miller, of Melrose Avenue, in Pennycross, denied all six charges when he first appeared at the court last month.

He pleaded not guilty to four counts of concealing, disguising, converting, transferring or removing criminal property.

One charge specifies 72 items of building and home improvement equipment allegedly sold on eBay under the username V6sam between November 2009 and October this year.

Items are said to have included drills, locks, alarms, fibre-optic trees, dimmer sets, lights and hobs.

Another count lists 66 items sold under the username Seadoosamy2011 between April last year and October this year.

Those items allegedly included telephones, showers, electric fires, tools, four sheds and ten Christmas trees with 20 stands.

A third charge lists 11 items placed on eBay under the username Ribbs1997 between January and October this year.

They include BMW car parts, electric showers and a chainsaw.

A further charge relating to the same username accuses Miller of concealing, disguising, converting, transferring or removing criminal property, namely an electric shower, between July and October this year.

Miller has also pleaded not guilty to burgling Exmouth watersports shop Liquid Motion on May 10 this year.

He allegedly stole wetsuits, surfboards, surfing equipment, surfwear and skateboards worth ?32,800.

Miller is finally charged with stealing the ?11,500 BMW M3 coup? from a man in Churston Ferrers, Torbay, on September 9 last year.

A previous court hearing was told how Miller was self-employed and had been running a sealant business over the last decade.

Appearing in the dock in a purple T-shirt, Miller was remanded in custody until his next appearance.

He will go before magistrates via videolink on Friday, November 23.

Wild dogs kill 2-year-old boy at Pa. zoo exhibit

PITTSBURGH (AP) ? A mother's attempt to give her two-year-old son a better view of wild African dogs turned into a tragedy at the Pittsburgh Zoo after the boy fell into the exhibit and was killed by a pack of the animals as relatives and bystanders looked on.

Lt. Kevin Kraus of the Pittsburgh police said the attack happened at about 11:45 a.m. Sunday after the mother picked the child up and put him on top of a railing at the edge of a viewing deck. "Almost immediately after that he lost his balance, fell down off the railing into the pit, and he was immediately attacked by 11 dogs," Kraus said. "It was very horrific."

It's not yet clear whether the boy died from the fall or the attack, said Barbara Baker, president of the Pittsburgh Zoo & PPG Aquarium. Zoo officials at first estimated the boy fell 14 feet, but police said it was 11. It's not clear which is correct.

The Allegheny County medical examiner planned an autopsy Monday and the boy's name was not expected to be released until that was complete.

Authorities said that zoo staff and then police responded "within minutes" but visitors described that time as being filled with screams for help. Zookeepers called off some of the dogs, and seven of them immediately went to a back building. Three more eventually were drawn away from the child, but the last dog was aggressive and police had to shoot the animal.

Steve Feldman, a spokesman for the Association of Zoos and Aquariums, said no one he's spoken to can recall any deaths of children at an accredited zoo over the last 40 years or more. Feldman said the Pittsburgh Zoo successfully completed its 5-year review in September, which means it meets or exceeds all safety standards.

Authorities didn't release the name of the boy or his mother, but say she is 34 years old and lives in Pleasant Hills, just outside Pittsburgh. The boy's father arrived on the scene soon after the accident, police said.

The zoo was immediately closed, and it was not clear when it will reopen, authorities said.

The so-called painted dogs are about as big as medium-sized domestic dogs, and 37 to 80 pounds, according to the zoo. They have large, rounded ears and dark brown circles around their eyes and are considered endangered.

The attack happened in a 1.5 acre exhibit called the Painted Dog Bush Camp that's part of a larger open area where elephants, lions and other animals can be seen. Visitors walk onto a deck that is glassed on the sides, but open in front where the roughly four-foot railing is located.

In May, some of the dogs crawled under a fence and escaped into a part of the exhibit that's usually closed. The zoo was on lockdown for about an hour as a precaution.

Past fatal attacks at have prompted zoos around the nation to review safety features of their exhibits. In 2007 a tiger jumped over a wall at the San Francisco zoo, killing one visitor and wounding two others. Authorities first said the wall was 18 feet high, but a review found it was just 12 ? feet.

In September a man jumped off an elevated viewing train at the Bronx Zoo in New York and was severely mauled by tigers.

Kraus said there was nothing to prevent visitors to the painted dog exhibit from jumping into the exhibit area.

Police and the Allegheny County medical examiner's office are investigating, and they haven't yet interviewed the mother and father, who are receiving grief counseling.

Baker said the zoo, which has never had a visitor death, will also investigate. She said no decision has been made yet on the future of the exhibit.
